What is mint salt?

Ingredients

  • 8 sprigs of mint, leaves plucked
  • 140 g/5 oz sea salt crystals

Process

Grind the mint and salt in a food processor until polished green. You can dehydrated the salt in a drying rack or on a baking tray in a low 70°C/195°F/gas oven to extend its shelf life, but this will result in some loss of brightness. I usually store it fresh in an airtight container in a cold, dehydrated place and employ it within 2 weeks.
